How to easily make Bhindi masala, Masala Arbi and Baingan Bharata- Indian recipes: In this article, I’ll tell you how to easily make Bhindi masala, Masala Aarbi and Baingan Bharata which are very famous and delicious in Indian recipes.

1. Baingan Bharata

Ingredients:

1. baingan/Brinjal round shape (1)

2. Onions (2)

3. Tomato (1)

4. Green chili (2)

5. Ginger garlic paste (1 tsp.)

6. Cumin seed (1 tsp.)

7. Coriander powder (1.5 tsp.)

8. Turmeric powder (1.5 tsp.)

9. Red chili powder (1/2 tsp.)

10. Kitchen king masala (2 tsp.)

11. Salt (according to taste)

12. Oil (3 tsp.)Method:

For the making of Baingan Bharata first, wash the baingan and now cut a little bit with a knife in the middle of the baingan. Now take baingan on the gas and roast it all around properly, after roasting, put a knife in baingan to see it has cooked or not.Now put a pan on the gas and pour oil in it and after it is heated, add cumin seeds to it and fry for two minutes. Once cumin seeds are cooked, then add onion and green chili in it and leave it for 3 to 4 minutes. Now when it gets a little bit roasted, then add ginger garlic paste and cook for 2 to 3 minutes. Now add tomatoes in it and cook until the tomatoes are completely cooked and mix well with onions. Now add turmeric powder, coriander powder, kitchen king masala, red chili powder and add half a glass of water. Now cook spices for 5 to 7 minutes until it becomes oiled. Now add salt according to your taste and add half glass of water and cover it for 3 to 4 minutes on low medium flame. After that turn off the gas and serve the Baingan Bharata with chapatti or paratha.

2. Masala Arbi: 

Ingredients:

1. Arbi (250 gm)

2. Tomato (2)

3. Onion (1)

4. Garlic (3 to 4 knobs)

5. Red chili powder (1/2 tsp.)

6. Kitchen king (2 tsp.)

7. Turmeric powder (1.5 tsp.)

8. Curd (2 tsp.)

9. Kashmiri Mirch (2 tsp.)

10. Ajwain (1.5 tsp.)

11. Hing (1 pinch)Method:

First of all, clean the Arbi with running water. Then put it in the cooker and boil it for 7 to 8 minutes. After that cut, some large pieces of Arbi and press it with the help of palm and then put a frying pan on the gas and pour oil in it and after heating the oil, fry the boil Arbi until the Arbi turns the brown color. Now take an another frying pan and will put it on the gas, now pour the oil in it after heating the oil, then add Heeng and ajwain and cook it for 1 to 2 minutes. Now add garlic and cook it for 40 to 50 seconds. After that add onion and fry until its turn brown, then add tomato puree and leave it for 3 to 4 minutes. Now add turmeric powder, red chili powder, kitchen king masala and Kashmiri Mirch (for color), then add a half cup of water and cook all the spices for 4 to 5 minutes. After that add curd and mix it well for 1 minute. Then add one and a half cup of water and salt (according to your taste), now cover it and leave it for 8 to 10 minutes on low medium flame. After that turn off the gas and serve the masala Arbi with chapatti, paratha or puri.

 3. Crispy masala bhindi:

Ingredients:

1. Ladyfinger/Bhindi (250 gm)

2. Gram flour (3 tsp.)

3. Rice flour (1 tsp.)

4. Ajwain (1 tsp.)

5. Turmeric powder (1.5 tsp.)

6. Red chili powder (1 tsp.)

7. Mango powder/Amchur powder (1.5 tsp.)

8. Coriander seed (3 tsp.)

9. Cumin seed (2 tsp.)

10. Cumin powder (1 tsp.)

11. Salt (according to taste)

12. Oil (for deep fry) Method:

For making crispy bhindi first wash the ladyfinger and dry it. Now cut it into the length wise and with the help of a knife cut a bit from the middle. Now, first of all, you prepare the masala which is filled in the middle of the lady finger, for that, you have to put the pan on the gas and add coriander seeds and cumin seeds, let it cook for 3-4 minutes. After that grind, this spice properly, then add salt and red chili powder mix it well now masala is ready. Then take a bowl and add gram flour, ajwain, turmeric powder, amchur powder, cumin powder, salt, rice flour and some drop of water. Another side takes a ladyfinger and fills the masala in the middle of the lady finger. After that filled lady finger mix in the gram flour mixture which is already made. Now take a frying pan and pour oil in it. After heated the oil fry the ladyfinger until its turn brown.
